Vegan Green Curry Recipe Thai

Green curry is a flavorful and popular dish in Thailand, with its unique blend of spices and herbs. Green curry is made with a base of coconut milk, green curry paste, and vegetables. This vegan version of the classic Thai green curry is sure to please the palate.

Ingredients

For the green curry paste:

  • 4-5 green chilies, seeded and chopped
  • 2 shallots, chopped
  • 2 cloves garlic, chopped
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground coriander
  • 1 teaspoon cumin powder
  • 1 teaspoon white pepper
  • 2 tablespoons lemongrass, minced
  • 2 tablespoons fresh ginger, minced
  • 1 tablespoon fresh galangal, minced
  • 2 teaspoons salt
  • 2 tablespoons vegetable oil

For the curry:

  • 1 can coconut milk
  • 2 tablespoons vegan fish sauce
  • 1/2 cup vegetable broth
  • 2 tablespoons brown sugar
  • 1 red bell pepper, diced
  • 1 cup broccoli florets
  • 1/2 cup mushrooms, sliced
  • 1/2 cup green beans, cut into 1-inch pieces
  • 1/2 cup snow peas, cut into 1-inch pieces
  • 1/2 cup carrots, sliced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced

Instructions

1. To make the green curry paste, combine the ingredients in a food processor or blender and blend until smooth. Set aside.

2. Heat the coconut milk in a large pot over medium heat. Add the green curry paste and stir to combine. Simmer for 5 minutes, stirring occasionally.

3. Add the vegan fish sauce, vegetable broth, and brown sugar to the pot and stir to combine. Simmer for 5 minutes.

4. Add the bell pepper, broccoli, mushrooms, green beans, snow peas, and carrots to the pot and simmer for 10 minutes, stirring occasionally.

5. Add the basil, cilantro, and lime juice to the pot and stir to combine. Simmer for 5 minutes.

6. Serve the vegan green curry over steamed rice or noodles and enjoy!
